hey i'll vouch for the recipe... poppyseed chicken is one of my family's favorites!  

Poppy Seed Chicken Casserole

Okay so Jessi can't figure out how to post because she doesn't have a blog but she said this recipe is delicious so I'm trusting her. Try it out and let me know! This is what she emailed to me to post:


2 cups chicken, cooked & chopped 
1 cup sour cream
1 can cream of chicken soup
1 tbsp soy sauce
1 stick butter
2 tbsp poppy seeds
1 stack ritz

Combine chicken, sour cream, cream of chicken soup and soy sauce. Pour into 9 x 13 casserole dish. Sprinkle with crushed ritz, poppy seeds and melted butter. Bake at 350 for 30 minutes.

ok and these are my secret tips so I added one box of wild grain or multi grain rice it was about 1 1/2 cups. And basically i cooked the rice and then i mixed it in with the chicken mixture before i spread it in the pan. And my other tip is crush up the ritz and mix it with the poppy seeds and butter before you sprinkle it onto the chicken mixture. OK ENJOY!

Ranch Chicken (from Betty Crocker cookbook)

So this I'm not putting this in orthodox recipe form, but this is super simple and super yum.

1. Butterfly a chicken breast

2. Dip both sides in Ranch dressing.

3. Cover in bread crumbs.

4. Cook at about 350 on griddle... or medium heat on frying pan.

Pumpkin Chocolate chip Cookies

1 cup canned pumpkin
1 cup white sugar
1/2 cup vegetable oil
1 egg
2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon milk
1 tablespoon vanilla extract
2 cups semisweet chocolate chips
1/2 cup chopped walnuts (optional)

1. Combine pumpkin, sugar, vegetable oil, and egg. In a separate bowl, stir together flour, baking powder, ground cinnamon, and salt. Dissolve the baking soda with the milk and stir in. Add flour mixture to pumpkin mixture and mix well.
2. Add vanilla, chocolate chips and nuts.
3. Drop by spoonful on greased cookie sheet and bake at 350 degrees for approximately 10 minutes or until lightly brown and firm.


I made these today and they were DIVINE! They probably tasted better because I was mildly sulking in self pity at the time of baking but none the less they tasted really good. ha :)

White Chili


2 cans great white northern beans

1 can garbonzo beans

2 cans white corn

1 family size can cream of chicken

3 cans chicken broth

8 oz cream cheese

3/4 tsp oregano

1/2 tsp cayenne pepper

1/2 tsp cumen

2-3 shredded chicken breasts


boil the chicken, combine other ingredients once chicken is shredded. boil. serve. good with chips or bread bowls.
